Organic Avocado Toast with Poached Eggs
Classic, easy, and oh-so-delicious. We'll use organic sourdough bread, top it with smashed organic avocados, and crown it with perfectly poached organic eggs. A sprinkle of organic chia seeds for that extra crunch!
Ingredients, 2 pers.
4 slices organic sourdough bread
2 ripe organic avocados
4 organic eggs
1 tbsp white vinegar (for poaching eggs)
Organic chia seeds, for garnish
A handful of organic cherry tomatoes, halved
Mixed organic greens for the side salad
Olive oil, salt, pepper to taste
Instructions:
Toast the Bread: Lightly toast the sourdough slices in a toaster or oven until golden and crispy.
Smash the Avocado: In a bowl, smash the avocados with a fork. Season with salt and pepper.
Poach the Eggs: Bring a pot of water to a gentle simmer. Add a tbsp of vinegar. Crack eggs into the water one at a time. Cook for about 4 minutes for soft poached eggs. Remove with a slotted spoon and drain on a kitchen towel.
Assemble the Toast: Spread the smashed avocado on each toast slice. Place a poached egg on top of each.
Garnish and Serve: Sprinkle with chia seeds and arrange cherry tomato halves. Serve with a side of mixed greens drizzled with olive oil and lemonjuice.
