Organic Veggie Omelette with Fresh Herbs
Packed with flavor and goodness. We'll whisk organic eggs with a splash of water, pour into a hot pan, and fill it with organic spinach, tomatoes, bell peppers, and fresh herbs like basil or chives.
Ingredients, 2 pers.
4 organic eggs
2 tbsp water
Salt and pepper, to taste
1/2 cup organic spinach, chopped
1/2 organic bell pepper, diced
1/2 cup organic cherry tomatoes, halved
Fresh organic herbs (basil and chives), chopped
1/4 cup organic cheese (optional)
4 strips of organic bacon
Olive oil or butter for cooking
Instructions:
Cook the Bacon: In a skillet, cook the bacon over medium heat until crispy. Drain on a paper towel and set aside.
Prepare the Omelette: In a bowl, whisk together eggs, water, salt, and pepper.
Cook Veggies: In a non-stick skillet, sauté spinach, bell pepper, and tomatoes with a little olive oil until just soft.
Make the Omelette: Pour half the egg mixture over the veggies. Let it set slightly, then sprinkle with herbs and cheese. Gently fold the omelette in half and cook until the egg is set.
Serve: Plate the omelette and serve with the crispy bacon on the side.
